How To Prepare Beef Matumbo With Simple Ingredients



Beef matumbo also know as tripe is not a common meal in many of our homestead. It is hardly found in our local butchery. Beef matumbo may not be liked by many consumers but it is actually a cheap source of protein. A beef matumbo can provide daily protein requirement for any adult. Beef matumbo also has vitamin B12, Phosphorus, Zinc among others.


Apart from providing all those nutrients, beef matumbo is sweet. Here is an ingredient on how to prepare a good meal of it.

Ingredients
1/2 kg beef matumbo
1 onion
5 cloves of garlic
2 carrot
3 tomatoes
1 green pepper
1 ginger
A pinch of salt
Coriander leaves
1/2 teaspoon of black pepper
2 tablespoon oil

Preparation
First thing is to clean your beef matumbo with cold water at least 3 times to remove any unwanted particles on it. Put the matumbo in your sufuria, add half glass of water and leave it to boil. While they are boiling, grind the ginger and add it into the boiling matumbo. Ginger makes the matumbo tender and adds more flavour. Wait for 2-3 hours until they are ready. I prefer to use a charcoal stove for boiling matumbo because of the time required to cook them.

Now to preparing the other ingredients. Chop the onions, coriander leaves, and the green pepper. Grind the tomatoes, carrots and the garlic. Put them aside until use.


Take another clean sufuria and put it on a heat source. Add oil, onions, green pepper and garlic. Stir continuously on a low constant heat until the onions turn transparent. Now add your boiled matumbo to the onion mixture and mix for around 2 minutes. Add black pepper, tomatoes and stir for 30 seconds. Finish by adding the carrots. Stir until the ingredients mix. Cover the sufuria with a lid for 3 minutes to make the carrots soft.

Now that the carrots are soft, add a little water to make sure the stew does not dry out. Also add salt to taste. Wait for 2 minutes before adding the coriander leaves. Cover the lid for another minutes before removing the stew from the heat.


The stew is ready for consumption. You can serve the stew with rice or ugali. Enjoy!
